Breaded Chicken Breast

  • [3/4] c dry bread crumbs or Panko

  • [1/2] c grated parmesan cheese

  • [4 1/2] tsp minced fresh parsley

  • [3/4] tsp salt

  • [1/4] tsp pepper

  • [1/3] c butter or margarine

  • [3] T lemon juice

  • [2] garlic cloves, minced

  • [6] boneless skinless chicken breast halves

  • Dash paprika

  • In a shallow bowl, combine the bread crumbs, parmesan cheese, parsley, salt and pepper.

  • In another bowl, combine the butter, lemon juice + garlic.

  • Dip chicken in butter mixture, then roll in crumbs.

  • Roll-up chicken, jelly-roll style; place seam side down in a greased 11-in x 7-in x 2-in baking dish. Drizzle with any remaining butter mixture; sprinkle w/ paprika. Bake, uncovered at 350 degrees for 35 minutes or until juices run clear

  • Yield: 6 servings

This recipe is important to me because it was passed down to me by my mother. My mom wanted me to learn how to cook a few dishes before I left home for college. My favorite meal is her breaded chicken breasts, so naturally it was the first dish I asked to be taught. One of my favorite memories with her is making this dish together.
